Fruit Salad

If you are looking for a delicious fruit salad, here is the recipe for you!  This fruit salad is light and flavorful with a great tasting sauce.  Perfect to take when you need a quick and simple dish for a special dinner an event.

2 red apples, cored and diced - (do not peel)
2 cans mandarin orange drained (do not keep juice)
1 med. jar marashino cherries, drained, (do not keep juice)
1 large can chunk pineapple, drained (reserve juice)
1 cup blueberries
1 cup pecans
1 small box vanilla instant pudding
4 tsp. Tang breakfast instant drink mix

Mix fruit together in a bowl.  Mix pinapple juice, pudding and Tang with a fork or wire whip until thick.  Pour over the above fruit and marinate overnight.  Just before serving cut up 2 bananas and mix in the pecans and stir gently to mix.

Cranberry Salad

This recipe is a must have for the upcoming holidays. It adds color and sparkle to any menu!

6 ounces Package Raspberry Gelatin
2 cups Boiling Water
16 ounces Can Jellied Cranberry Sauce
8 ounces Can Crushed Pineapple
3/4 cup Orange Juice
1 tablespoon Lemon Or Lime Juice
1/2 cup Chopped Pecans Or Walnuts

Dissolve gelatin in boiling water. Break up and stir in cranberry sauce, undrained pineapple, orange juice, lemon juice, and nuts. Pour into a pretty serving dish or a large mold sprayed lightly with non-stick cooking spray. Chill until firm. Tip mold over onto a plate to unmold.

Berry Mandarin Tossed Salad

I am a salad lover! I can also make up a pretty mean salad. At a luncheon this salad was prepared and it beat any salad I have ever made! It is delicious. You will LOVE this recipe!

Dressing
1/4 cup sugar
2 T cider vinegar
2 T honey
1 & 1/4 tsp lemon juice
1/2 teaspoon paprika
1/2 teaspoon ground mustard
1/2 teaspoon grated onion
1/4 teaspoon celery seed
dash salt
1/3 cup vegetable oil ( I use olive oil)

Salad
8 cups torn mixed salad greens
2 cups sliced fresh strawberries
1 can (11 oz.) mandarin oranges, drained
1 medium sweet onion, sliced into rings or chopped
1/3 cup slivered almonds, toasted
4 bacon strips, cooked and crumbled
1/3 cup chopped walnuts (if desired)

In 2 cup bowl, combine first nine ingredients. Microwave on high for 1 & 1/2 to 2 minutes, stir until sugar is dissolved. Whisk in oil. Cover and refrigerate until serving. In a large salad bowl, combine salad, fruit, onions, almonds, walnuts and bacon. Drizzle with dressing and gently toss to coat. Yield 12-14 servings.

Sensational Salad

I have shared previously how challenged I was as a newlywed in the cooking area. I've almost been disowned by my family over this, but I don't like tomatoes, but neither does dear husband, so as a tomato less family, we are fine! So in the beginning my salad entree consisted of iceberg lettuce. And that was it! If I felt adventurous, I would put some cucumbers in there, but not often.
I'm not sure how it all came about, but through the years after learning about healthy living, living foods etc, I have adapted our salad routine some. Now I only use dark green lettuce ( romaine, spring mix, field greens etc.) and mix raw spinach in with it. Here is a list of other ingredients to add:

lettuce (the deeper the color, the more nutritional value)
spinach
green onions
shredded carrots
red bell pepper
broccoli pieces
mozzarella or Parmesan cheese
sunflower seeds

Mix all together for a fabulous salad. Sometimes I add chopped apple or strawberries if there are some around. You can mix and match with any ingredients. Trust me - you can't mess up a salad!
