Pecan Pie Cupcakes

 
 
Pecan Pie Cupcakes

Ingredients:

1 cup chopped pecans
... 1/2 cup all-purpose flour
1 cup packed brown sugar
2/3 cup butter, melted
2 eggs

Directions:

Preheat oven to 350 degrees.

In a medium bowl, combine all ingredients and mix well.

Spray a miniature muffin tin with non-stick cooking spray. (The spray with flour in it works best!)

Fill each 3/4 full.

Bake in preheated oven for approx 18 minutes.

NOTE: Generously spray your pan with cooking spray with flour. Once they come out of the oven let them cool for one minute then flip them out onto a cooling rack. If they cool in the pan they'll have to be chiseled out.

Also don't fill the pan to the very top, they will overflow if you do.

Strawberry Oatmeal Bars

These are super easy and super delicous!  A wholesome snack for the family or a treat to take to share.

Ingredients

  • 1 3/4 sticks salted butter, cut into pieces, plus more for greasing pan
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cup oats
  • 1 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • One 10 to 12-ounce jar strawberry preserves
  • 1/2 cup chopped pecans

Directions

Preheat the oven to 350 degrees F. Butter a 9-by-13-inch rectangular pan.
Mix together the butter, flour, oats, brown sugar, baking powder and salt. Press half the oat mixture into the prepared pan. Spread with the strawberry preserves. Sprinkle the other half of the oat mixture over the top and pat lightly. Bake until light brown, 30 to 40 minutes. Let cool completely, and then cut into squares.

Homemade Pancakes

Homemade pancakes are easy!  And, much better for you!  Here is a great recipe:

  • 2 eggs
  • 2 1/2 cups milk (I use whole milk)
  • 1/2 cup olive oil
  • 1/4 cup honey
  • 3 cups whole wheat flour (I use fresh-ground hard white)
  • 1 tsp. sea salt
  • 4 tsp. baking powder

Beat together eggs, milk, oil, and honey in bowl. Add in rest of ingredients and mix well with a whisk. Fry on hot griddle or make waffles in a waffle iron. Top with butter and syrup.

Baked Apple Donuts


A change my family is making towards better eating is to use fresh ground wheat.  This is a new experience for us, but there are many recipes out there to help along! Here is one I found from Graham Family Ministries. 

OVEN BAKED APPLE DONUTS


3 cups flour (I use hard white wheat freshly ground)
1 cup sugar
1 tablespoon baking powder
1 teaspoon sea salt
1 teaspoon ground nutmeg
½ cup olive oil
2 large eggs
1 cup milk
2 cups cored and finely diced apples

Topping:
½ cup butter, melted
1 ½ cups sugar
3 teaspoons ground cinnamon

Preheat oven to 350 degrees. Grease and flour two 12-cup muffin tins   In a large bowl, combine the flour, sugar, baking powder, salt, and nutmeg. Set aside.

In a small bowl combine oil, eggs, milk, and apples. Add to flour mixture and mix just until everything is moistened and mixed up.
Spoon batter into muffin cups, filling about 3/4ths full.

Bake at 350 degrees for 20-25 minutes or until lightly browned.

Topping:
While muffins are baking, prepare topping. Melt butter. Then combine the sugar and cinnamon in a small bowl. When muffins are done baking, dip in melted butter, then in the cinnamon/sugar mixture. Place on a serving tray to serve. Yummy!
Yield: 24 muffins

Easiest Pumpkin Muffins

Come Have A Peace shared a pumpkin muffin that is about the easiest I have ever seen!  Since I love pumpkin, I had to get this recipe!

Easy Pumpkin Muffins

1 box of spice cake mix
1 c. of canned pumpkin (not pie mix, just pumpkin, so you can also do it yourself, if you can't find find canned pumpkin)
1/2 c. water

Mix ingredients together until you just see a few dry cake mix crumbs. Spray 12 muffin tins, and spoon batter into the pan. Bake at 350 degrees for 24 min.

How easy is that??

Breakfast Casserole

1 cup fully cooked and drained ground sausage
1 cup shredded cheddar cheese
1 & 2/3 cup milk
1/3 cup mayonaise
1 & 1/2 tsp prepared mustard
4 eggs
1 cup Bisquick baking mix
salt and pepper to taste

Sprinkle sausage and cheese in 9 inch baking pan.  Beat remaining ingredients until smooth,  pour into dish.  Bake at 350 for 35 to 40 minutes or until knife inserted in center comes out clean.  Cool 5 minutes before cutting.  Serves 8

Butterscotch Sticky Buns

Ingredients
  • 5 tablespoons butter or margarine, divided
  • 2 packages crescent rolls (8 oz each)
  • 12 ounces butterscotch morsels, divided
  • 1/2 cup pecans, chopped
  • 1/4 cup sugar
  • 1 1/2 teaspoons lemon juice
  • 1 1/2 teaspoons water
  • 1 teaspoon ground cinnamon
  1. Preheat oven to 375F.
     
  2. Melt 2 tbsp butter in 13 x 9 baking pan.
     
  3. Unroll crescent rolls, separate into 16 triangles.
     
  4. Sprinkle triangles with 1 1/2 cups butterscotch morsels.
     
  5. Starting at shortest side, roll up each triangle, arrange in prepared pan.
     
  6. Bake for 15 to 20 minutes.
     
  7. In small heavy saucepan over low heat, melt remaining butterscotch morsels with remaining butter, stirring until smooth, remove from heat.
     
  8. Stir in pecans, sugar, lemon juice, water and cinnamon.
     
  9. Pour over hot rolls and return to oven.
     
  10. Bake for 5 minutes or until bubbly.
     
  11. To prevent sticking, immediately loosen buns from pan. Cool 10 minutes

Cherry Cobbler Muffins

1 Can Cherry Pie Filling
1 Tsp. Lemon Juice
1/2 Tsp. Almond Extract
1 1/2 Cups Flour
1/3 Cup Sugar
1 1/2 Tsp. Baking Powder
1/2 Tsp. Soda
1/4 Tsp. Salt
1/2 Tsp. Cinnamon
1/2 Cup Chopped Pecans
1 Egg
2 Tbsp. Butter, Melted
1 1/4 Cups Buttermilk
Cinnamon Sugar for topping

Separate one cup cherries from pie filling. Add lemon juice and almond extract. Set aside. Mix together flour, sugar, baking powder, soda, salt and cinnamon. Blend in pecans. In another bowl, whisk egg with melted butter and buttermilk. Add to dry ingredients, mixing together lightly. Fill muffin cups one-half full. Drop two cherries into each muffin cup, then cover with batter. Sprinkle tops with cinnamon sugar and bake until lightly browned.Bake at 375 degrees 20-22 minutes

Blueberry Muffins

Since there are some fresh blueberries in the freezer, I made up a batch of blueberry muffins!

1 1/2 cup all purpose flour
1 T baking powder
1/2 tsp salt
1/4 cup sugar
4 T - 1/2 stick butter
1 egg
3/4 cup + 2 T milk
1 cup blueberries

Preheat oven to 375. Sift flour, baking powder and salt in a large bowl. Stir in sugar. In a separate bowl whisk until just blended butter, egg and milk. (mixture should be slightly lumpy). Add blueberries to bowl and stir them in just enough to combine. Pour into muffin baking pan.

Don't leave this part out!
mix
2T butter
2 T brown sugar
1 T flour
1 T nuts
You can adjust amount to desired amount. Mix together until crumbly. Sprinkle on top of muffin dough before baking.

Bake 15-20 minutes or until golden brown.

Biscuits and Sausage Gravy

If there is one thing I have learned by living with four boys, it is that they like to eat and to eat hearty. Here is one of their favorite breakfasts:

Sausage Gravy over Biscuits.
(and there is an easy way to do this!)

Brown 1 tube of pan sausage. Drain and place on paper towel lined plate.
You can either purchase a pack of instant gravy mix (country gravy or peppered gravy). You will want to put the mix in the frying pan used for the sausage and add 1/2 cup milk and 1/2 cup water and cook according to directions...
Or you can spoon some flour, butter and milk into the pan and stir until thick. Season with salt and pepper.
Once the gravy is made, add the sausage to the gravy and simmer for about 5 minutes. Spoon over biscuits. (Frozen biscuits are ok!)

Easy Apple Dumplings

Here is a sweet, flaky apple dumpling. Quick and easy!
Take one apple - peeled sliced into 8 pieces
1 can crescent rolls divided into 8 triangles
Sauce:
1 cup orange juice
1/4 (or more to taste) brown sugar
2 T butter
sprinklings of cinnamon, nutmeg, allspice and ginger - to taste
Place in small pan and heat just to simmering.
Wrap each apple slice in a crescent roll. Place in small baking dish and spoon sauce over each one. Bake at 350 until brown and flaky.

Pumpkin Blueberry Muffins

Today is a perfect fall day, a nice wind is blowing through the open windows and it is a great day to bake! I found this recipe for pumpkin muffins and gave it a try. They are great!

1 1/2 cups all-purpose flour
2/3 cup sugar
2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup canned pumpkin
1/2 cup milk
1 egg
1/4 cup butter, melted
3/4 cup blueberries, fresh or frozen
1/4 cup light brown sugar


Preheat oven to 400 degrees. Combine dry ingredients. Blend pumpkin, milk, egg and butter. Add pumpkin mixture to dry ingredients. Fold in blueberries. Fill tins. Sprinkle evenly with brown sugar mixed with a little cinnamon. Bake 20 minutes. Yields 12 Muffins.

Walnut Pear Muffins

Fresh pears are in season in my area and my uncle has a tree loaded with them! That is why I may seem to be on a "pear kick". In an attempt to use the pears up, I did an internet search for pear muffins and came across this one. It is the best muffin I have ever tasted! Hope you enjoy the recipe.

1 & 1/2 Cup All Purpose Flour
1/2 Cup Brown Sugar
2 & 1/4 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon groung ginger
1/2 teaspoon salt
1 medium pear, peeled and chopped finely
1 egg
1/2 cup vanilla yogurt
1/2 cup vegetable oil
1 teaspoon vanilla
Topping Mixture
3 to 4 Tablespoons finely chopped walnuts
3 to 4 Tablespoons brown sugar

Place first 6 ingredients into a large bowl. Stir in chopped pear. Whisk together in a separate bowl egg, yogurt, vanilla and oil. Stir wet ingredients into dry ingredients until just combined - do not over mix. Fill greased muffin pans about 2/3 full. Mix topping ingredients together. Sprinkle topping mixture over each muffin. Bake for 20 - 25 minutes at 350 until lightly browned.
